Crispy Air Fryer Zucchini Fries

The air fryer is by far my favorite kitchen appliance. It’s quick and easy to use and my kids seem more inclined to eat their veggies if I make them in the air fryer. These crispy zucchini fries are so delicious when you make them in the air fryer and are a hit with everyone in the family. We paired our zucchini fries with this ranch dip from Gimme Some Oven and it was perfect (I used whole milk greek yogurt).

Crispy Air Fryer Zucchini Fries

These zucchini fries come out so crispy in the air fryer and they are less greasy than making them using the traditional fried method.

Ingredients

  • 2 zucchinis
  • 2 T avocado oil
  • 2 eggs
  • 1/2 C almond flour
  • 1/2 C grated parmesan cheese
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Cut your zucchinis into pieces that are about a 1/2in thick and 3in long. A medium sized zucchini should make about 12 fries. Pat zucchini fries with a paper towel to absorb any extra moisture.

  2. Whisk eggs in a bowl. In a second bowl combine almond flour, parmesan cheese, paprika, garlic powder, salt, and pepper.

  3. Coat zucchini fries in the egg mixture, and then coat them in the flour mixture. Lay the coated fries on a plate or baking sheet and cover with plastic wrap. Place in the freezer for thirty minutes or until the coating hardens.

  4. Coat the air fryer basket with avocado oil and preheat the air fryer to 380 degrees for five minutes on the air fry setting.

  5. Add the zucchini fries to the basket and cook at 380 for 18-20 minutes, or until crispy.
