It’s holiday season which means it’s my favorite time of the year.  I love nothing more than to spend my days in holiday pajamas with Christmas music playing in the background while I bake yummy treats.  Theo is two now so he is able to participate and understand a bit more, so this year will be even more magical.

There is so much that I want to do before Christmas is here.  Our weekends are going to be full of all of the festive activities.  I figure I better take advantage of my one on one time with Theo now because after the holidays the baby will be here!  The baking frenzy has already started and the first thing I made this season were these magic bars.

There are so many different recipes out there for magic bars.  Essentially you can make them however you want and as long as they taste good then… MAGIC!  These are incredibly easy to throw together and I actually had all of the ingredients on hand when I went through my pantry.

Magic Bars

They are so so SWEET and really RICH, so they are perfect for your family members with a sweet tooth.  You could easily tweak this recipe to fit any dietary restrictions that you may have.  If you’re vegan or dairy free use Enjoy Life dairy free chocolate chips in place of the regular ones and try adding shredded coconut instead of the white chocolate chips.  Substitute coconut butter for the regular butter this recipe calls for and you have a delicious vegan dairy free dessert.  I think it would turn out really yummy!

Magic Bars

Chocolate chips, cranberries, and walnuts top a yummy graham cracker crust to make the most incredible dessert bars to share with your family and friends.  See notes for tips on how to make these vegan and dairy free.

Servings 15 bars

Ingredients

  • 3/4 cups Unsalted butter
  • 2 cups crushed graham crackers
  • 1 cup dark chocolate chips
  • 1 cup white chocolate chips
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 8 oz full fat canned coconut milk

Instructions

  1. Preheat oven to 350F.  Line a 9 x 9 inch baking pan with parchment paper.

  2. Melt the butter over low heat in a saucepan.  Add graham crackers crumbs and toss until they are well coated.

  3. Add the graham cracker mixture to the pan and press evenly to form a smooth bottom layer.

  4. Sprinkle on the chocolate chips, white chocolate chips, cranberries, and walnuts.  Pour the coconut milk over the top of it all.

  5. Bake in the oven for 30 to 35 minutes until the edges begin to turn golden brown.  

  6. Let the bars cool completely and refrigerate for at least an hour before serving.  Store in the fridge for up to 5 days.

Recipe Notes

You can get creative with this recipe and make substitutions based on what you have on hand.  If you are vegan or dairy free substitute:

  • coconut butter for unsalted butter
  • Enjoy Life chocolate chips for regular chocolate chips
  • coconut shavings for the white chocolate chips

These bars are very rich and could be cut to serve 30 smaller bars if you'd like.
