Sunshine Energy Bites

I always need a quick nutritious snack that I can grab on the days that I workout, and these sunshine energy bites are my current go to. They have a good amount of protein and fat to give you energy for your workout. Best of all, you just need are a few simple ingredients to pull these together.

Sunshine Energy Bites

With just a few ingredients these energy bites come together quickly. They are a great source of protein and fat and are sure to keep you going when you need a little boost.

Ingredients

  • 1/2 C raw unsalted sunflower seeds
  • 2 T maple syrup
  • 1/2 C sesame seed butter
  • 2 T water
  • 1 tsp cinnamon
  • 2 T coconut flour
  • 2 scoops Vital Proteins collagen peptides
  • 1/4 C chocolate chips

Instructions

  1. Combine all of your ingredients except the chocolate chips in a medium sized bowl and mix well. When the ingredients have come together in a smooth mixture fold in the chocolate chips.

  2. Roll into tablespoon sized balls, and place on a sheet of parchment paper. You should get between 8-10 energy balls. Place in the fridge for 30 minutes before eating.

  3. These should last for 5-7 days in an airtight container in the fridge.

Recipe Notes

  • If your balls seem too dry add a bit more water, 1 teaspoon at a time.  If they seem too moist, add in more coconut flour, 1 teaspoon at a time.
  • You can use whatever protein you have on hand.  I like that the Vital Proteins collagen peptides is unflavored, but a vanilla protein would work fine too
