Pomegranate Guacamole

It’s almost Cinco de Mayo, are you guys doing anything fun to celebrate?  We will be in New York which I’m excited about, so we’ll have to find some yummy Mexican food on Saturday.  Guacamole is a must so if you have any good restaurant recommendations, send them my way.

Jordan and I are a little nervous about leaving Theo for the weekend.  We’ve never been away from him for so long.  My mum will be watching him and she’s got a lot of fun things planned for them.  He’s going to be so busy he will probably forget all about us, but we’re going to miss him so much!  Also, one of my good friends is having her gender reveal this Saturday.  Not gonna lie, I’m pretty disappointed that I won’t be there.  Seriously though, I can’t wait to find out what she’s having!  My guess is girl, but we will see!

Guacamole

Alright, back to the good stuff.  This pomegranate guacamole recipe is ridiculously simple, but it’s so delicious.  If you’ve got a Cinco de Mayo party coming up, this is the perfect appetizer.  Who doesn’t love guacamole?   This definitely isn’t your traditional recipe, but it’s fun to mix things up sometimes.  I love the sweetness that the dried fruit adds to the recipe and the pomegranate arils add the perfect amount of tart.  I got the idea for this from one of my favorite local restaurants, and it’s seriously addicting.

Pomegranate Guacamole

The perfect party dip!  Definitely double up if you are bringing to a party though, it goes fast!

Prep Time 10 minutes
Servings 4

Ingredients

  • 4 avocados
  • 1 lime, just the juice
  • 1/4 C white onion red would be good too
  • 1 clove garlic, minced
  • salt to taste
  • pepper to taste
  • 1/3 C dried apricots, chopped
  • 1/4 C pomegranate arils

Instructions

  1. Mash your avocados in a large bowl, leaving somewhat chunky.  Squeeze in your lime juice and add in the rest of your ingredients, saving a bit of the fruit to throw on top.  Enjoy!

Recipe Notes

This would also be really good with dried cranberries.  Play around with your favorite dried fruit to see what you like best!
