Turmeric Chickpea Salad

Sorry for the lack of posts lately, but things have been a bit hectic!  If you follow me on Instagram you’ve heard a bit about what’s been going on.  Our kitchen sink broke four times in the month of February, leading there to be water damage to our kitchen floors.  The floors were ripped up last week but now we have to check for mold before we are able to place the new flooring down.  We have temporarily moved in to my mum’s house while the floors get fixed, which has actually been kind of nice.  She lives near some nice mountains and it’s a really nice neighborhood for walking, so Theo, Matix and I have been getting outside a lot.

 

With everything that’s been going on with the housing situation it’s been hard for me to find the time to get posts written.  I’ve got some really good posts coming up this month though that I can’t wait to share with you!  This chickpea salad that I’m sharing today is the perfect appetizer for your Easter brunch.  It’s really easy to make and can be shared with your vegetarian friends.  If you need the recipe to be dairy free you can replace the greek yogurt with a plain vegan yogurt or vegan mayonnaise.  If you want to read more about the health benefits of turmeric, you can learn more here.

This chickpea salad is a great source of vegetarian protein and can be eaten as a dip with crackers or used as a sandwich filling instead of tuna salad.  I made Theo a panini with it and added a little bit of avocado as well and he loved it.

Chickpea salad

This chickpea salad makes the perfect party dip or vegetarian sandwich filling.

Ingredients

  • 1 15 oz can of chickpeas rinsed and drained well
  • 2 stalks of celery finely diced
  • ¼ C red pepper diced
  • 1 green onion diced
  • ¼ C plain greek yogurt I like Green Mountain Creamery
  • 1 T yellow mustard
  • 2 tsp fresh lemon juice
  • 1 T turmeric
  • ¼ tsp sea salt
  • dash dash of freshly ground pepper

Instructions

  1. Mash chickpeas in a medium sized bowl and mix in greek yogurt.
  2. Add in the rest of the ingredients and stir until well combined.
  3. Serve with crackers or in a sandwich.

Recipe Notes

Replace the greek yogurt with your favorite plain vegan yogurt option to make the recipe dairy free and vegan.
