Oatmeal Breakfast Bars

It’s no secret that I’m all about the breakfast foods, and if I can prep them ahead of time even better. These oatmeal breakfast bars are made of a few simple ingredients that you most likely have on hand. You can make a batch of these on Sunday night and eat them for breakfast or snacks all week long.

These oatmeal breakfast bars are also a great alternative to serving a bowl of oatmeal. If you’ve got littles then you know that oatmeal is reserved for when you’ve got time to clean up afterwards. For most of us, that means weekends only. I like that these can be eaten in the car too if you’re really in a time pinch.

Switch up the toppings on these oatmeal breakfast bars depending on what you have on hand. They’re also really good topped with jam, sliced apples or pears, or even just a spread of almond or cashew butter. You can store them in the fridge for up to 5 days!

Oatmeal Breakfast Bars

Quick to prep for an easy yummy breakfast all week long.

Prep Time 5 minutes
Cook Time 15 minutes
Servings 8

Ingredients

  • 2 C oat flour or blend rolled oats to make your own flour
  • 1 C mashed banana about two large bananas
  • 1/4 C creamy almond butter
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 T milk I used oat
  • 3 T ground flax seed

Instructions

  1. Preheat oven to 350 degrees F. Line a 9×9" baking pan with parchment paper.

  2. Combine all ingredients in a medium sized mixing bowl and pour into the baking pan, smoothly evenly with a spoon. Top with desired fruit, nuts, etc.

  3. Bake at 350F for 15-17 minutes. Let the bars cool for ten minutes before serving.
