Chai Cookies

Ingredients

  • 1 1/2 C gluten free all purpose flour
  • 1/2 C rolled oats
  • 1 tsp ginger
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp nutmeg
  • ½ tsp ground cloves
  • ½ tsp sea salt
  • 1/8 tsp black pepper
  • ½ C coconut sugar
  • 2 tsp baking powder
  • 3 T almond milk or milk of your choice
  • 1 T maple syrup
  • ½ C coconut oil melted
  • ¼ C unsweetened applesauce
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.


  2. Mix together the dry ingredients in a large bowl. Add in the melted coconut oil, almond milk, maple syrup, applesauce, and vanilla extract and stir until well-combined.


  3. Using a spoon, scoop 1 inch balls of cookie batter and place on the baking sheet, before flattening the cookies. Place them about 1 inch apart (they don’t spread a lot when baking).


  4. Bake for 14 minutes and enjoy!
