Lemon Tahini Dressing

Is it just me or does it feel like this month has absolutely flown by?  We’re already almost through February and into March which means that winter is essentially over and Spring is almost here!  This lemon tahini dressing is giving me total spring vibes, and I have to admit I love it!  It’s been chilly here in Phoenix (think high of 60 haha) and I’m looking forward to pool days and splash pad fun with Theo.  Ask me again in May though and I will probably already be complaining about the weather.  It gets so hot herein Phoenix that outdoor fun has to be done first thing in the morning unless you want to fry.

But back to the recipe.  I make this lemon tahini dressing most weeks and just keep it in the fridge to add to different things.  It makes the most scrumptious salad dressing which is what I used it for in this post.  It’s also really good as a spread on sandwiches or paired with some salmon in a power bowl (how to build the perfect power bowl).  The lemon adds the perfect amount of tang and the tahini makes the dressing so creamy.  Tahini also happens to be a great source of calcium, making this dressing the perfect dip for little ones.  You can add a little less water to the recipe if you want it to be thicker to use as a dip.

Lemon Tahini Dressing

The perfect dressing to add to your favorite salad... it's tangy, creamy, and full of flavor.

Course Salad
Prep Time 5 minutes
Servings 10

Ingredients

  • ½ C tahini
  • 2/3   C water
  • 5 T fresh lemon juice
  • 1 clove garlic
  • ½ tsp salt
  • 1.5 T nutritional yeast
  • black pepper to taste

Instructions

  1. Mix all ingredients together in a food processor until smooth.  Add to your favorite salad and enjoy!
