Vegan Chocolate Covered Strawberries

Chocolate covered strawberries have always been one of my favorite desserts. They are so simple but there’s something so delicious about them. We used to live near a fancy grocery store that had a bakery. Jordan would get an extravagant overpriced brownie that was totally unique and delicious and I always wanted a chocolate covered strawberry. He would get so annoyed because it was like $3 for one strawberry… that’s right… ONE! And they weren’t even especially big or fancy strawberries.  Needless to say, I rarely actually got one because I couldn’t justify the price.

With Valentine’s Day coming up I was brainstorming some yummy easy desserts that I could make for my family. And what do you know… chocolate covered strawberries popped into my mind! I adapted this recipe from my chocolate peppermint fudge recipe, and I am so happy with how it turned out. This chocolate sauce is so rich and delicious and comes together in no time at all. It’s also dairy free, so it’s the perfect treat for your vegan friends!  The cashew butter gives it some added protein so it’s almost like you’re just eating a healthy protein bar… well maybe it’s not even close to that but whatever.

I may or may not have licked the bowl of chocolate sauce clean… it’s that good.  Let me know what you think.

Vegan Chocolate Covered Strawberries

These chocolate covered strawberries are dairy-free and vegan.  The chocolate sauce is so rich and decadent it'll be the dessert you make over and over again.

Course Dessert

Ingredients

  • ¼ C cashew butter
  • ¼ C coconut oil
  • ¼ C maple syrup
  • ¼ C cacao powder
  • ¼ tsp vanilla extract
  • Pint of strawberries

Instructions

  1. Add all of your ingredients except the strawberries to a saucepan. Whisk on medium low heat until you have a creamy chocolate sauce. Dip strawberries into the sauce and place on a baking sheet lined with parchment paper. Place the baking sheet into the fridge for about 20 minutes, or until the chocolate is cool and hardened.

Recipe Notes

Before cooling your strawberries in the fridge, top with coconut flakes, cinnamon, crushed nuts, sprinkles, or whatever else your dessert-loving heart desires!
