Healthy Chai Cookies

Healthy chai cookies... vegan and gluten free

This is the first bog post I’ve done since we’ve moved in to the new house!  I’ve been so excited to share these healthy chai cookies with you but things have been a bit hectic around here.  The gas company made a mistake with scheduling our gas to be turned out and we moved over a holiday weekend which made things even worse.  We didn’t end up having gas for the first four days we were here, which means we couldn’t use the oven or stove, we couldn’t do any laundry, we had no hot water for showers, and we had no heating!  Thankfully it’s been pretty warm here in Phoenix, so the coldest it probably got at night was in the 50’s.  We had Theo sleep in our bed with us to make sure that he was warm enough and we went to a friend’s house for showers.  As food cooking… that clearly went out the window.  We ate most of our meals out for a few days in a row, so it was nice to get back into the kitchen this week.

Everyone’s starting their New Year detoxes and I’m just over here making cookies, per usual.  In all honesty, I’ve loved seeing everyone’s posts on instagram about their lifestyle and diet changes.  I’m excited to hear about the results people achieve with their cleanses, both physically and mentally .  It’s not actually advised to detox while you are pregnant or breastfeeding, and I’m still breastfeeding Theo.  When you do a detox you are pulling toxins out from where they are stored in your body and then they are eliminated through your bodies excretion methods.  This includes breastmilk, which means if you detox while breastfeeding then some of those toxins are going to be ingested by your baby.  That’s the last thing anybody wants, so I will hold off on any sort of a detox or cleanse until I’m done breastfeeding.  That being said, I do plan to continue eating healthy and taking care of myself… just with a few cookies thrown in here or there.

These chai cookies have the perfect amount of spice to them, making them different from the usual cookies people make.  And they’re actually pretty healthy, as far as cookies go.  They are sweetened with a little bit of maple syrup, but the majority of the sweetener comes from coconut sugar, which doesn’t spike your insulin as much as white sugar does (see this post for more info about the impact foods have on your insulin levels).  These cookies are perfect with an afternoon latte, or a cold glass of milk.

Chai Cookies

Ingredients

  • 1 1/2 C gluten free all purpose flour
  • 1/2 C rolled oats
  • 1 tsp ginger
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp nutmeg
  • ½ tsp ground cloves
  • ½ tsp sea salt
  • 1/8 tsp black pepper
  • ½ C coconut sugar
  • 2 tsp baking powder
  • 3 T almond milk or milk of your choice
  • 1 T maple syrup
  • ½ C coconut oil melted
  • ¼ C unsweetened applesauce
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.


  2. Mix together the dry ingredients in a large bowl. Add in the melted coconut oil, almond milk, maple syrup, applesauce, and vanilla extract and stir until well-combined.


  3. Using a spoon, scoop 1 inch balls of cookie batter and place on the baking sheet, before flattening the cookies. Place them about 1 inch apart (they don’t spread a lot when baking).


  4. Bake for 14 minutes and enjoy!
