Maple Apple Brussel Sprouts with Bacon

This Maple Apple Brussel Sprouts recipe is the perfect Thanksgiving side dish.  It’s a simple recipe with few ingredients that end up coming together for an out of this world taste.  I feel like brussel sprouts are one of those foods that gets a bad rap.  I hear so many people say that they don’t like them, and I’m not going to lie, growing up I didn’t either.  However, as an adult, brussel sprouts are one of my favorite vegetables.  Honestly I could probably eat them roasted plain because I love them so much.   However, for those of you that aren’t yet sold on brussel sprouts, this is the recipe for you.  Brussel sprouts can be a little bit bitter and the maple and apple in this recipe lend a sweetness that balances it out.  Plus, these brussel sprouts are mixed with bacon.  Need I say more?  If you’re a vegetarian just leave the bacon out, I promise it’s still delicious.

Jordan loves brussel sprouts and actually told me that this was one of his favorite sides that I’ve ever made.  Theo, on the other hand, can’t make up his mind about them.  I keep serving them to him so that he has plenty of chances to decide if he likes them or not.  The night that I made this recipe for dinner he was not feeling the sprouts at all.  He looked me straight in the eye and nonchalantly dropped every single sprout off of his tray.  However, I gave them to him the next day for lunch and he ate them all and had a second serving.  Kids can be so odd.

Maple Apple Brussel Sprouts with Bacon

Prep time: 15 minutes          Bake time: 30 minutes

(vegan, gluten free, egg free, dairy free)

Ingredients:

1lb Brussels sprouts, tops removed and cut in half

2 T avocado oil

½ tsp of sea salt

2 medium apples, cut into ½ inch cubes

6 slices of nitrate free bacon, cut into 1 inch pieces

¼ C maple syrup

Directions:

Preheat oven to 400 degrees F.

Toss the brussel sprout halves with the avocado oil and salt and spread them evenly on a baking sheet. Roast them for about 30 minutes or until fork-tender, shaking the pan at the fifteen minute mark to ensure the sprouts roast evenly.

Heat a skillet over medium heat (I use a cast iron skillet). Add the bacon to the skillet and cook for about 10 minutes, or until it’s halfway cooked. Add the apple cubes to the skillet and continue cooking until the bacon is crisp and the apples are soft.

When your brussel sprouts are finished roasting, remove them from the oven and add to your skillet. Pour in your maple syrup and toss to combine the flavors.

Serve as is or take this dish to the next level by topping with this cranberry pumpkin granola.
