Blueberry Zucchini Oatmeal Bake

I just started a new part-time job, and while I’m really excited about it, it’s going to be a bit strange for me to no longer be home with Theo every day. At this point I’ve been a stay at home mum for ten months and it’s been amazing. If you had asked me before having kids if I would have wanted to be a SAHM I would have replied with a very firm no.  But after having Theo I realized that not only is it what worked best for our family at the time, but I’ve also really loved hanging out with my little man everyday. I will definitely miss him on the days that I’m working, but I’m also really looking forward to starting my new job and thankfully it is fast paced so I will have plenty to keep my mind off of my little man while I’m away!

Jordan owns his own business, so fortunately we have some freedom with his schedule and we are able to make it work so that on the days that I’m working, he will be working from home and taking care of Theo (daycare is freakin’ expensive so I’m happy to avoid that expense). On the days that I’m going to be gone I like to prep foods for Theo so that Jord doesn’t have to spend too much time cooking him meals. Let’s be real, Jord’s more likely to choose easier options for Theo like a veggie burger or frozen waffles, and while I buy those things so that we have the option for something quick and easy, I prefer to keep the processed foods to a minimum.

One food Theo really loves is oatmeal and he would eat it every day for breakfast if I let him. He makes such a mess when he eats it though that I find myself feeling reluctant to give it to him all that often, and I know Jord won’t give it to him when I’m gone haha. Usually with foods that I consider really messy I will just preload his spoon for him and after each bite he will hand me the spoon back and I’ll put more on it. Honestly though, he loves oatmeal so much that he gets really excited when he’s eating it and wants to eat it faster than I can get it on the spoon! After a few bites he starts chucking the spoon back at me as if to say “hurry it up already” which results in oatmeal being flung across the table. I end up just giving up and letting him have at the oatmeal with his hands. As much as he enjoys that, I don’t love the clean up. He gets oatmeal in his hair, in his ears, on poor Mattie’s head (our bullterrier who is always patiently waiting for food to drop), and I will seriously find it in the far corners of the kitchen. I wanted to find a way to let him enjoy his oatmeal that didn’t result in me spending thirty minutes cleaning up the kitchen…. Say hello to oatmeal bake!

Blueberry Zucchini Oatmeal Bake

Prep: 10 minutes          Cook Time: 25 minutes

Ingredients:

2C gluten free rolled oats

1/3C brown sugar, packed

1.5tsp baking powder

2 flax eggs

1/4C coconut oil

1/4C nut butter (I used cashew)

1/3C milk (I used almond)

1 C grated zucchini

½ tsp cinnamon

½ tsp salt

1 C blueberries

Instructions:

To make your flax eggs:  Combine 2 T of ground flax and 5 T of water. Allow the mixture to set for 5 minutes before using.

Combine all of the ingredients except the blueberries into a mixing bowl and stir until thoroughly mixed. Gently fold in the blueberries. Bake at 350 for 25 minutes.

Flax egg:

To make one flax egg combine 1 T of ground flax and 2.5T of water.  Allow the mixture to set for 5 minutes before using.
